香辣猪扒
用料:
猪扒300克。
腌料:
酒1茶匙,咖喱粉半茶匙,老抽半茶匙,盐半茶匙,糖半茶匙,椰汁半汤匙(或用淡奶取代,以椰汁较佳,)小鸡蛋半只,生粉1汤匙。
做法:
1、猪扒洗净,抹干水拍松,加腌料腌半小时。
2、烧热平底锅,放下多些油烧滚,下猪扒半煎半炸,煎时半盖镬盖,待煎熟一面反转另一面再煎至熟,取起切小件或原件上碟(半盖镬盖能使猪扒快熟,又可以避免油溅污厨房。煎时不能把镬盖盖密,因有倒汗水滴在镬中,令油弹起,烫伤皮肤,要把镬盖抹干水,才可盖上)。
Fried Chilli Pork Chops
Ingredients:
2/3 1b pork chops
Marinade:
1 tsp wine; 1/2 tsp curry powder; 1/2 tsp dark soy sauce; 1/2 tsp salt; 1/2 tsp sugar; 1/2 tbsp coconut milk or evaporated milk; 1/2 small egg; 1 tbsp mung bean flour
Method:
1.Wash, wipe and pound pork chops. Marinate for half an hour.
2.Heat up enough oil in frying pan or wok. Shallow-fry pork chops in one side first, when they are ready turn them over. For shallow- frying, halfly cover the wok with lid can ensure even and quick cooking. It can prevent hot oil from splitting out too. Serve on plate in whole or in small pieces.
